When it comes to eating carbs while on the blood sugar journey, limit eating "lonely carbs." To have an optimal, within-range blood glucose response after eating, you want to pair carbs with a source of protein, fat, and fiber. Whether or not you have pre-diabetes or Type 2 Diabetes, this tip comes in handy, becuase it also keeps you fuller longer! When you eat a regular cookie for a snack, there's limited (if any) protein and fiber. However, when you have an Empowered Cookie, there's already 7g of protein and 5g of fiber in one cookie—leading to a better blood sugar response!
Their vegan cookies are made with almond meal instead of flour which decreases the total carbohydrates in their cookies. Almond meal makes their vegan cookies a great source of high-quality fats which is important for blood sugar balancing. Coconut nectar is used instead of sugar becuase it is low glycemic, resulting in a less likely out-of-range blood sugar reading after eating these cookies.
They even use golden flaxseed meal instead of eggs which gives these vegan cookies a rich flavor while adding healthy fats and fiber—two key blood-sugar stabilizing nutrients. Flaxseed is also an excellent source of omega-3 fatty acids, which promote heart and brain health and can even lower triglycerides.
Empowered Cookie is a great vegan cookie for those looking to lower their blood sugars especially while traveling or when in need of an on-the-go snack.
It's clear that the Empowered Cookie cares about ingredients, taste, and macronutrient composition of their cookies. One vegan cookie comes in at only about 16g of carbohydrates, 7g of protein, and 5g of fiber. The quantity of carbohydrates, along with a good source of protein and fiber, make it a well-balanced, type 2 diabetes-friendly snack. Additionally, protein and fiber provide satiety, so you're full after enjoying your cookie. Whether you're trying to eat more plant-based or not, you'll feel good about having this vegan cookie for breakfast or as a post-workout snack!
As a dietitian, when I look for snack options of my clients, I am always keeping my eyes peeled for qualities and certifications that can suit a wide variety of diets. Empowered Cookies are made with organic ingredients, and are Certified Gluten Free, Paleo-Friendly, Vegan, and Non-GMO. They also hold certifications for 1% For the Planet, Women-Owned, and No Palm Oil. It means a lot when I find brands that not only care about the Earth, but also the people that live on it. I personally feel good about eating these cookies, as well as recommending them to my clients.
Chocolate Chip Walnut is my favorite flavor, especially for a post-dinner treat! Lemon Lavendar, Raisin Walnut, and Ginger Molasses are great to grab for a morning snack, or an afternoon tea or coffee. They're just the right amount of sweet that makes them a great "all day" vegan cookie! Whether you're on a blood sugar journey or not, these vegan cookies might just be your go-to snack—they'll leave you feeling satisifed after eating!
